How to cancel Ubisoft+
Sign in at ubisoft.com and open Account Information > Subscriptions. Choose Cancel subscription. Console-store purchases are cancelled in that store instead. Access runs to the end of the paid month and games stop launching after.

Cancelled and still charged?
Then the charge is not coming from Ubisoft+. Whoever took your money holds the subscription — if you subscribed inside an app, it is the app store, and only the app store can stop it.
