How to cancel Nintendo Switch Online
On the Switch: Nintendo eShop > your icon > Nintendo Switch Online > turn off automatic renewal. On the web: accounts.nintendo.com > Shop Menu > Nintendo Switch Online. Auto-renew is on by default and the console does not remind you. Online play and cloud saves stop when it lapses; save data in the cloud is deleted after a grace period.

Cancelled and still charged?
Then the charge is not coming from Nintendo Switch Online. Whoever took your money holds the subscription — if you subscribed inside an app, it is the app store, and only the app store can stop it.
