Does deleting the app cancel my AWS subscription?

No. Removing an app from your phone does not stop the billing. The subscription is held by whoever charges you — the service itself, or the app store you bought it in — and has to be cancelled there.

How do I know if I am still being charged for AWS?

Check for a confirmation email and then your next bank or card statement. A cancellation that worked ends with a confirmation screen giving the date access stops.
